The cuisine of Paco Pérez stands out for spotlighting Mediterranean ingredients, with particular emphasis on local products and fresh seafood, as well as the best Protected Designation of Origin wines in its extensive cellar, with more than 700 labels.

The chef, who trained alongside great icons of signature cuisine like Michel Guèrard and Ferran Adrià, and has a total of five Michelin stars under his belt, is in constant search of new culinary experiences. Enoteca’s tasting menu expresses this philosophy through avant-garde and creative cuisine. In the autumn, you can opt to be amazed by the sublime white truffle tasting menu, exclusively available during the season.
