Hotel Arts Barcelona celebrates truffle season with 10 course white truffle menu at two Michelin starred Enoteca

Hotel Arts Barcelona is preparing to welcome the hotly anticipated truffle season by launching two new menus created by Chef Paco Pérez at the hotel’s acclaimed two Michelin-starred restaurant Enoteca. Available throughout November the lead menu contains truffle in every course, whilst a paired down, less intense version is also available. Sommelier Joao País has utilised the restaurant’s impressive wine cellar to create a dedicated wine paring which will compliment this extremely special seasonal menu.

The highly prized truffles used in each dish are sourced from Alba in the Piedmont region of northern Italy, one of the most celebrated gastronomic regions in Europe. Harvested underground below oak trees, the truffles are gathered in October and November only, making them the most valuable ingredient on the market at this time of year.

Ingredients used by Pérez throughout the menu have been carefully selected because they bring out the essence of the truffle in a particularly special way. Locally sourced ingredients and fresh Mediterranean produce also inspire dishes.

Highlights include a selection of clever combinations for a Truffle Tapas course, delicacies such as Oyster, Truffle Cream and Spices, Egg with Ham Parmentier, Urchins & Truffle and Wagyu with Mushrooms, Potatoes & Truffles and imaginative creations such as Guinea Fowl with Crayfish, Mushroom & Truffle. Truffled Brie and a dessert of White Chocolate, Yoghurt, Milk Curd, Quince and Truffle ensure the essence of this seasonal speciality is present throughout.
Available from 26th October and throughout November, the full ten-course White Truffle Menu is priced at 200€ per person. An additional menu with more subtle touches of white truffle is also available for 170€. Reservations can be made at artsrestaurants@ritzcarlton.com
